There's Rice At Home: Potato Hash

NOSA: After all the wahala on Twitter over "pyam", I really hoped we could post the recipe on the blog today. Unfortunately, Chef Imoteda created it for a restaurant so no sharing.

FOLLY: OMG some of y'all are so noisy. From the way some people were reacting on Twitter, I can only assume that they are as shout-y and noisy IRL.

NOSA: She did give us her potato hash recipe and we can definitely share that. 

FOLLY: Just waiting for some fake outrage on the name or process now 🙄🙄

Ingredients

10 medium sized Irish potatoes

peeled and diced, you want roughly half inch cubes

3 pork sausages

diced also into one inch cubes, you may have to fry them slightly first depending on the sausage you use

1 large red onion

chopped

2 tablespoons salted butter

2 tablespoons extra virgin olive oil

we’re do trying to be healthy here

dried thyme

dried rosemary

black pepper

Directions

melt butter in large skillet or saucepan over medium heat

add olive oil once butter is melted

add potatoes and toss making sure all pieces are properly coated in oil.

put the lid on and let cook covered for about 15 minutes

remove lid, raise heat to medium high and add your onion and pork sausages.

cook until potatoes turn a nice golden brown.

you’ll have to stir often so they cook even and some don’t burn.

add thyme, rosemary and black pepper to taste.

I love rosemary so I tend to throw in handfuls of the stuff but be careful, too much will make it seem like you’re eating twigs.

cook for another five minutes then serve

best served piping hot
